I haven't listened to much Nightcore outside of soccer tournaments. Checked out a few youtube playlists, but was never sure if I was listening to the good stuff. There seems to be a lot out there. Any quality reccomndations?

It's something to do with hearing a song in a different key than you're used to. I don't know what about it makes it sound better than the original, but I know in my teens I used to pitch up/down (usually down) songs in Audacity by 1 semitone and it'd sound cooler.

Maybe for the same reason anime is appealing–it makes some part of your brain think the singer is something alien, in a way that it might be an evolution beyond normal humanity
